4 Skinless bone or boneless chicken thighs or breasts
¾ tsp. salt
2 tbsp. Olive oil
1 onion finely chopped
2 cloves garlic, minced

Garam Masala Mix: Quick and easy substitute that is pretty good…Mix cumin, coriander, cardamom, pepper, cinnamon, cloves and nutmeg in a bowl. 1 tsp. ground cumin
¼ tsp. ground cinnamon
3 carrots, julienned
1 cup of basmati rice
¾ cup walnut pieces
½ cup raisins

Sprinkle chicken with ½ tsp. salt. In large nonstick skillet, heat oil over medium heat. Add chicken; cook, reduce heat to low and cook until almost cooked through, about 15 minutes. Remove from skillet. Add onion and garlic to drippings in skillet; cook, stirring, until tender, about 5 minutes. Stir in garam masala, cumin, cinnamon and remaining ¼ tsp. of salt. Stir in carrots and rice until coated in seasonings; add 1 ½ cups of water. Return chicken to skillet. Cover, over low heat, cook, stirring occasionally, until rice is tender and chicken is cooked through, about 15 minutes. Serve topped with walnuts and raisins. Makes 4 servings.
